A Blend of Golden Sour Beers Aged in Oak Barrels With Orange Wine Pomace
Our journey begins just before the end of 2015, when Sean brewed his first Lambic-inspired beer at home and placed it into a wine barrel inoculated with various yeasts and bacteria collected from other breweries and yeast labs. Then in May 2017, a portion of this barrel was used to kick off the mixed culture for Small Pony’s inaugural brew day! After over two years, the (misplaced) sole remaing sherry-like barrel of this beer was found and immediately flagged for use in a wine beer. We blended it with a younger buckwheat beer, one of our usual golden base beers, and one fermented with Norwegian yeasts. The blended beer was refermented on wild Chardonnay Orange Wine pomace from KIN Vineyards in Carp before returning to barrel to rest once more. Here ends the journey!
